Vegan Cornbread (Oil-Free)

Ingredients

  • cup whole wheat pastry flour or all-purpose flour
  • 1 ⅓ cup cornmeal
  • ½ cup sugar
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1 tablespoon ground flax
  • 3 tbsp water
  • 1 cup milk
  • cup applesauce

Instructions

  • Preheat oven to 375° F
  • Make a flax egg by combining the ground flax and water.
  • In a bowl combine the flour, cornmeal, sugar, salt and baking powder.
  • Add the rest of the ingredients to the bowl along with the flax egg and mix to combine.
  • Pour into a prepared baking dish.
  • Bake for 30 minutes or until a toothpick comes out clean.
